Our Mission
At Crave Crêperie, we are committed to crafting exceptional sweet and savory crêpes inspired by French tradition and Portland flair—served from a fully dedicated, celiac-safe, gluten-free food cart. As a women-owned and locally rooted business since 2019, our mission is to deliver an unforgettable culinary experience that delights the senses while honoring dietary needs and fostering community in every delicious bite.
Who We Are
We’re Kate and Will—the third owners of Crave Crêperie, Portland’s beloved gluten-free crêpe food cart nestled inside Pod 28. Drawn to Crave’s dedicated celiac-safe kitchen (a rarity in Portland), we knew we had to keep it going when it went up for sale. Since taking over, our mission remains clear: to serve up the best sweet and savory French-inspired crêpes—crafted entirely in a gluten-free, celiac-safe environment—without compromising flavor or experience.
Our batter is made with organic buckwheat for savory crêpes and a gluten-free blonde batter for sweet ones, with thoughtful touches like crème fraîche, house-made lemon curd, or lavender lemonade to round out the experience. We take pride in feeding everyone—whether you eat gluten or not—with organic and locally sourced ingredients whenever possible.

The Crave Story
Crave Crêperie began in 2019, when founder Dana Shaw Greissing started serving made-to-order crêpes from a food truck located in Pod 28. In late 2023, Alana Antunovich took the reins and transformed the entire menu into a fully gluten-free, celiac-safe experience. By early 2025, Alana chose to pass the torch, and Will and Kate Rutledge—longtime fans of the cart with their three kids—stepped in to carry forward the vision, keeping the tradition of Crave alive and thriving.
